Eric Herve PhD, ETS Laboratories, "Interactive Introduction to Common Wine Flaws and Faults." The session includes a sensory demonstration of common flaws using aroma standards. Discussion will focus on sensory characteristics, exploring the perception of aromas as stylistic character or faults, and the top preventative techniques. Gordon Burns ETS Laboratories, "Managing Sulfur Dioxide". For thousands of years winemakers have relied upon sulfur dioxide as a winemaking tool. Gordon will discuss the latest best practices in use of sulfur dioxide including techniques to minimize additions over the life of the wine. James Osborne, PhD in Food Science, Oregon State University Food Science and Technology, "Managing microbes for prevention of common flaws". James will address the management of wine microbes, the basic microbiology and how various strategies can affect, control, or result in flaws including recent research that may provide state-of-the-art control techniques. Dwayne Bershaw, MS in Enology, Southern Oregon Wine Institute, "Managing barrels for prevention of common flaws". Dwayne will provide instruction on managing barrels and cooperage, the basic issues, and how various strategies can affect, control, or result in flaws. Patricia Howe MS, ETS Laboratories, "Managing Sanitation - Maintaining Quality". Patricia will address the basic concepts of winery sanitary management and an applied approach to developing cleaning, sanitizing, and sterilization procedures. Emphasis will be placed on methods to evaluate the effectiveness of sanitation procedures. |
